Before Coravin found a place in home bars around the world, it garnered praise from professionals in restaurants, wine bars, and wineries. If you don’t know the story, it goes a little something like this:
Greg Lambrecht, inventor and founder of Coravin, combined his knowledge of medical-grade needles with his passion for wine to create a device that could extract wine from an unopened bottle. The first iteration of the Coravin wine preservation system was purely for personal use in the late 1990s – fast-forward several years, the first Coravin (Model C1000) became available for purchase. During his years of testing, Greg worked closely with winemakers and industry experts to blind taste wines accessed, 3 months, 6 months, 3 years after they were first accessed. As you might’ve guessed, the wines were as fresh and flavorful as the day they were first accessed.

Located in Manhattan's Koreatown, this intimate 14-seat restaurant provides a tasting menu experience around a U-shaped counter. The menu is inspired by Korean traditions and techniques, and the wine list is an ever-changing offering of classics and wines from avant-garde producers.
Le Bernardin, Midtown (#44)
Located just steps from Radio City Music Hall, this culinary institution with Chef Eric Ripert at the helm has been serving up seafood and French classics for nearly 50 years. The wine menu is overseen by wine director, Aldo Sohm, a legend in the wine world. Pulling from a 15,000-bottle collection, the menu focuses on pairings that complement Chef Eric Ripert’s cuisine. We’d love to visit this cellar featuring 900 wine selections from 12 different countries with vintages dating back to 1875.
Ikoyi, Piccadilly Circus (#49)
Launched in 2017 by Chef Jeremy Chan and restaurateur Iré Hassan-Odukale, Ikoyibuilds its menu around British micro-seasonality, sustainable line-caught fish, and aged native beef. What makes the menu special is… the spices. Most are meticulously sourced from sub-Saharan West Africa, enhancing the flavor of each dish. Food lovers flock to Ikoyi for the signature dish of smoked jollof rice which pairs nicely with many of the French and Italian wines on the wine list. The Clove Club, Shoreditch (#35)
Diners visit The Clove Club in Shoreditch, London, to enjoy a relaxed, fine dining experience featuring modern, elegant dishes rooted in technique but presented in a truly artful way. The Clove Club uses both Coravin Timeless and Coravin Sparkling to pour wines by the glass to pair with their seasonal tasting menu. According to The Clove Club’s sommelier, Coravin Sparkling is a game-changer. “Because we are closed two days a week, we used to waste a bottle and half [of sparkling wine] on a weekly basis. Le Clarence, Paris 8e Arrondissement (#28)
